I was thinking of adding valves on either side of the fresh water pump. This way I could isolate the tank and isolate the rest of the boat when cleaning the screen on the freshwater pump.

I tried to do this today and it wasn't east to keep the water in the tank or keep the rest of the boat from draining into the cave. Luckily I had my son with me to put hit thumb over the boat side while I held the other side above the water tank level. I thought isolation valves would be a nice addition.

I need to figure out what valve to use? There is a section of flexible hose between tank and pump and another 2 foot length before tying into the PEX. I need to figure out what type of valve to use in the flexible hose.

If the hose goes to a barb fitting screwed into the bottom of the tank and you have access, I would tend to replace the fitting with one attached to a short length of pex. The pex will then hold the valve securely and you can transition to a hose fitting after that. Here is the one I used:

Otherwise you can make it super simple and insert a ball valve inline in the hose. If the hose is attached with barb fittings, you can use one like this (get the correct size for your hose):

If the hose has threaded fittings, you can get a ball valve to match.
