Put the boat up on the trailer. Came back this weekend to winterize and bank 2 was drained to like 5v.
I thought this battery was only used to start the engine. What might have drained it?

There are items that draw power 24/7 even with the battery switches off. Best bet is to download the owners manual from the Ranger Tug website for your model. Items on 24/7 are LPG Controller, Engine hatch, all volt meters, bilge pumps, bilge pump alarms, Co monitors, and Stereo memory.
 
5volts actual reading from the solar remote, Would it really get drawn down that low?... I wonder if I have a loose battery cable.

I would recommend checking the engine batteries for any inline fuses. Depending on the build date of you boat, you may have the Webasto diesel heater on the engine bank. When the heater goes into maintenance mode (red lights flashing), it can drain the charge on the battery if left unaddressed over a long period of time. Once the boat is charged up, I would recheck the voltage just in case.

Is your analog on the panel reading the same? Also check voltage at battery bank with multimeter. If you are getting good voltage at battery with multimeter and on analog at panel, check your solar fuse that goes to the battery bank. I suspect that there is corrosion build up causing high resistance. If no corrosion check all solar panel connections from battery bank to controller.
