It's been discussed at length here. Search for airhead. We installed one when we bought our R25 used in 2014. Had a few growing pains that the manufacturer helped work through. We're loving it now and I smile at every post here about holding tanks, macerator pumps, etc.
 
Had it since the boat was new so I was able to convert the holding tank to potable water. If you want more details call me 203-512-9138 I'm on the east coast so consider the time change. 🙂

We installed a composting toilet in our previous boat. We used it continuously for over half a year. We eat a high fiber diet and there were enough deposits made in the toilet that the deposits never dried out and composted. It was a chore to scrape out the sticky contents every couple of months which required a large, heavy-duty, metal kitchen spoon. If the boat was only used on weekends, a composting head might have a better chance of working as advertised.

We had similar issues our first season with the Airhead. We use ours fifty percent of the time, one week full time, one week off through the course of the season. I communicated back and forth with the factory and it was evident that the unit was not adequately separating the liquids. The factory told me that every unit is tested to ensure proper liquid separation before being shipped and sent me a video of their test procedure. I duplicated the test set up in my garage(very simple) and found the problem. It was easily corrected with ten cents worth of plastic tubing and has worked flawlessly ever since( now on season six). It separates so well now that I have to add a bit of moisture during our off weeks to keep the composting process going.
