As promised by some of you, docking my 2016 25SC has been no problem this summer. I recently traveled on the Long Island Sound about 10 miles with winds of 10-15 knots. Some fairly significant chop, but I maintained cruising speed of 12-15 knots. Was I just lucky? Or was I pushing the boat too hard? What should be considered optimum speed? Docking with wind was not easy, but thrusters performed very well.

Optimal speed is whatever you choose. We have an R31, and formerly an R27. Both were/are very happy cruising at 15 knots. But, I prefer to go slow, around 6 knots, mostly because I prefer the fuel economy at those speeds. We ran our R31 after the break in period fully 6 hours at 15 knots, from Tacoma to Victoria BC. I don't want to pay that fuel bill again, but it was a great 3 day weekend in BC. For longer trips we just go slow so we don't need to fuel up all that often. Just preference.
