Cutwater level and trim tabs

With our dingy on davits, and no big outboard, our boat seems to sit a little stern heavy. (Our fried eggs in the morning always slide to the stern.) Does anyone know if this is normal? I believe this is also true without the dingy. I plan on adding a little chain to the anchor locker, anyhow. I also know not to trim a boat from far astern or forward.

I also want to know the best way to determine proper trim while underway. It feels like I want to watch the boat from the outside, to find the trim, but can't think of a way to do this that doesn't include fast drones. 12-14 knots feels exceptionally comfortable, and we don't get a lot of spray in the dingy. How do I set the trim tabs?

I would like to be able to travel faster, but the dingy on davits concerns me. I already lifted it up a little, and will continue to work toward a solution.
 
Generally my C30 is a bow up boat, even at rest. When I run 12 to 14 kn, I use full trim tabs, in calm seas up to mild chop. After that I adjust the trim so that I ride more on top of the waves.
