Electric grilling 101: the good, the bad, etc

We recently took delivery of our 2021 R27 and was looking for TugNut insights on how to best use the electric grill onboard.

And has anyone seen any modifications to add a lid , removable of course, or is that a nono for some reason?
 
We use a disposable aluminum pan to cover food while on the grill in order to get a similar effect as a lid. Just put a small heat tolerant weight on it (all metal tongs, etc.) to prevent it from blowing off.
 
Seems easy enough and kind of what I was thinking maybe but not finding deep enough and big enough pan.

Was concerned getting one too big or too small or not tall enough.

Any tips on grilling on an electric. 40+ yes with LP, got it down, but electric….
 
I recently started using a portable electric grill on my CW 28. It's much more compact that my propane grill. Saves a ton of room. I wasn't sure about cooking on it, but its been working out very well. We recently did a trip with three other boats where we got together for dinner. I made the steak and the little grill did a very nice job. I made a tinfoil tent as a cover, but in future I will use a roasting pan as noted above. I do have to run the genny to use it.

But I save on storage room and I don't have the little green gas bottles rusting all over the boat. If this continue to work out I'll put in an electrical outlet somewhere in the cockpit.

Has anyone added an outlet out there? If so, what location did you choose?
