I have two thoughts on making a foot rest for the passenger on the 21ec.
1. Check out http://www.Hardwaresource.com and look at Furniture Hinges...table hinges/shelf hinges. A nice stainless folding down hinge exists. Why not mount one on each side of the cabinet, using backing plates on the inside, and connect the two hinges with a bar/foot rest.? When it is folded down, there is room for the cabinet door to open.
2. Place a metal tube on the inside of each side of the cabinet cutout about two/three inches back from the cabinet wall and connected bottom and top to the boat bottom and underneith the counter top..these are your main supports. At the appropriate level drill a 1" hole each side of the cabinet and attach a hollow two/three inch tube to the main supports with the other end flush with the surface. (these fittings may already exist as rails,stantions, etc). A u shaped foot rest could then slide in the holes several inches for use and be removed for opening the cabinet door, etc.
