Fresh water leak

My 2013 R29S has a fresh water leak and I can't find the source. I know this because a bilge pump comes on from time to time, and because the last couple of times I left the boat with about 1/3 of a tank of water, and the next morning it was empty. The bilge pump by the forward end of the engine is bone dry but there's some water by the aft bilge pump. All of the connections at the potable water pump are dry. I'd like to start tracing from the water tank, but I can't even see it. Has anyone disassembled the shelving under the galley countertop to expose the water tank? How difficult is that to do?
 
Does your water pump cycle? If it does, then the leak isn't from the supply tank, but somewhere on the distribution side. Can you shut off your water pump and see if it still drains overnight?

I recently replaced the fill hose to my water tank through the hatch in the floor on my R31. It was not a pretty job, but it is doable. I guess depending on where the leak is you might be able to get at certain parts of the tank. You do need to remove your water pump to do so. I would be surprised to see a leak on the water tank outside of either the fill or vent hose connections.
