how do I access the fresh water tank and pump? it appears that the only possible way I see is take out the fridge.

The pump can be accessed by removing the grill/cabin heater.

As Rodney said if you pull out the heater unit under the helm you can get at the pump. There's no real way to get at the tank. It is under the floor just aft of the step down into the vee berth area. If necessary you can cut up the step to get access. If you boat is like mine there are a couple of trim pieces alongside the step which you can remove and at least get a peak at the tank.

Dan has it right. Pull out the heater unit to get access to the pump.

I installed a tank level sensor and had to cut out next to the step down to the v-berth to gain access. I just glued in a finished and painted white piece of 1/4" thick wood when I finished, and no it is not noticeable.

If you ever need to replace the water tank you'll need to cut out the deck, but it's one of those heavy duty platic tanks ( I think the walls are at least 3/8" thick) so I think it's unlikely. 13 years with ours with no issues.
