Lake Minnetonka- overnight parking

The days of us cruising with our R21EC are quickly coming to an end as we prepare to sell. Purchased a brand new to us 2014 R27 classic to cruise the bigger waters of the great lakes in addition to the St Criox/ Mississippi rivers with occasional Lake Minnetonka weekends. Figured out overnight parking for most adventures and already went on a couple, but having trouble finding truck and trailer overnight parking on Lake Minnetonka. I read that Grays Bay launch had overnight parking and had started launching my R21 for day trips out of there, but the truck and trailer pretty much take up the exact amount of space for parking and the R27 trailer is much longer so that may not be an option. I called a few marinas in the area that had launches but they don't have overnight parking. Most of the other public launches don't allow overnight parking as well. I'm hoping someone here might have a suggestion of how we could park our vehicle and trailer without getting ticketed.
 
We have used Interstate rest stops in western states. Many have an 8 hour limit but we have never had an issue staying 10 hours.
We have also stayed at RV parks. Usually they want you to capture your gray water. Not all will take boats.
Some truck stops take reservations in their truck overnight parking lots. We have done this several times.
We have also just pulled off the road into dirt parking lots where we saw other RVs and trucks are parked. We only do this if there are others around.
Finally, some Walmarts let you park at the back end of their lots. Each store may have a different policy so it’s good to call ahead.
We pull up the swim platform ladder at night, lock the cabin door, have a canned air horn and bear spray can handy. That said, we have never felt unsafe.
