Because of what I believe to be limited raw water cooling 1" thru hull instead of the recommend 1 1/4 " the operating temperature will vary with rpm and load. My C26 with 220 Volvo operates at 178 F @ 2250 , 180F @ 3200, 183F@ 3400 , 192F @ WOT 3940 rpm to 4130 rpm depending on gear on board. Any temperature above 200F I would troubleshoot.
