We are in Annapolis and the boat gets really warm when we’re not on her and have stuff opened up. I have a thermometer that tracks max and min and the boat is getting up to 120°. I’m thinking I should leave the AC on, set to 85-90° all the time while on shore power. Does anyone else do this? Good/bad idea? What’s the downside?

In a marina on someone else’s power I run the A/C non-stop to both “dry-out” the boat and keep it cool. You should consider how clean the water is however since some grasses etc. may clog up the sea strainer. I won’t let it run for more than a week without checking it out.

I keep mine on the dehumidification cycle while at the marina during the hot weather. I also put up the front window canvass, rear window and door canvass and draw all the side curtains. Seems to work.

If by chanace a line was to come off from the A/C not sure if the bilge pumps could keep up.. But many do leave it on while away.

A solar powered ventilator could be an option. Had one on the last boat and it seem to keep the temp down (not 120).

Something that works pretty well for me are rain shields that cover all the round portholes, and the two rectangular ones in the cave. http://seaworthygoods.com I leave the ports open all the time and the shields prevent the rain from getting inside. Seems to keep the humidity down a bit as well. Of course, I also close all the curtains, and even made a full width curtain for the inside of the windshield that is easy to use without climbing onto the bow.
