Stalling and low RPM on a 2008 R25 with 110hp Yanmar

We finally got Slipaway in the water last weekend. We put about 10 hours on the engine over 2 days with a fair amount of trolling. At the end of the first day while trying to dock, the engine stalled out when I put it into reverse. On the 2nd day the engine died on me a couple of times while going from idle into gear and again while trying to go into reverse at the end of the trip. It doesn't happen every time but when it does it seems as if when I push the throttle forward it just sputters. I go back to neutral and try again and it will either sputter or act normally. In addition the RPM's at WOT do not want to go above 2600. I stored it with a full tank and added several cans of Seafoam when I winterized her last year. I plan on changing the filters this weekend. It will be my first time for that. It's a 2008, and it just hit 400 hours (I know I should have done it at 250 hours, or sooner given the age.) There is no water or debris visible in the bottom of the Racor filter. Any idea what's going on here?
 
Newbie thought: wax cast from diesel? Surely colder in Eagle River than my balmy Salt Spring Island, and I was surprised when 2 minutes with a hair drier solved my Wallas diesel heater choking (boat had been idle all fall at least).

Change the filters it will probably fix your issue. Filter changes are hours or seasonal. Every service item is once a year or x amount of hours. Diesel fuel filters get gummy and can restrict fuel. Even if the fuel is clean. Change your filters more often they are cheap insurance!!!
