Stern Anchor for R-31

We are going for a trip on the Sacramento Delta. The usual way of anchoring is to tie the bow up to a tree on shore, and use a stern anchor to keep the boat perpendicular to the shore. The currents reverse .here, and there is often thru traffic in the sometimes narrow channels (sloughs).
I'd appreciate recommendations as to what the smallest size anchor I can use. I'll get a Danforth type. I'd like it to stow easily, maybe in the lazerette. I'd also like to use an anchor rode bag to store the rode and chain, maybe even the anchor.
Any suggestions would be appreciated, especially from those who have had experience with this on an R-31
 
Any reason not to use your bow anchor and then use rope to tie the stern to shore? That's what is done in the PNW for similar anchoring situations.
 
We have the Fortress FX-11 on our R27. I am really impressed with it. I think it would be big enough for your R31 but you should check the Fortress Selection Guide.
To save weight I only have 10 feet of 1/4" chain and 200 feet of 1/2" line.
We used it in some very heavy winds while anchored bow and stern on Santa Cruz Island and it worked flawlessly. I keep it on board as a backup anchor all the time.
 
Our backup anchor is the Mantus M1. It can be unbolted into 3 sections (anchor shank, fluke and roll bar) and folds flat when unbolted. Assembly and unbolting takes under 10 minutes. You can get whatever size you feel best. Very similar to the Rocna in performance.

Only that we'd have to deploy the dinghy to get ashore. Also would rather have the stern deck facing out.
