I am wondering if my calibration is correct.

For example, I filled tanks completely so they should have about 300 gallons. I ran 25-30 miles and Info Station says I have 235 gallons. There is no way I used 65 gallons running under normal conditions. Also, my Garmin says I still have 265 gallons which is about right since I was getting about .9 GPH during running.

I've read that the Yamaha Info station reports 10% less than what is in the tanks to hold a reserve. Hence, if I add 10% (30 G), then the Info Station matches the Garmin Remaining Fuel.

Doing a recalibration is not straightforward, for me anyways, since the manual says you need an empty tank.

I am wondering about this as well. Last time I took my boat to the dealer for service, somehow they managed to zero out all the fuel information in both the Yamaha display and the Garmin display. They can't, or won't, tell me what happened. I think I had about a 1/4 of a tank left before I took it in. I think all I can do at this point is to fill the tank and figure out how to tell both displays that the tank is full and go from there, hoping for the best.

We really need both Yamaha and Garmin for confirmation. Garmin is a simple reset for me: A/V, Gauges, Controls > Engines > Menu. After I have filled up the fuel tanks on the vessel, select Fill Up All Tanks. Yamaha does the 'old fashioned' sensor read from tanks, but, it's nice to have Garmin confirm the sensors are working fine.
