I'm getting ready to put my new (to me) 2021 R-27 LE in covered dry storage for the winter southern Virginia. No solar or shore power available. Which electrical switches, if any, should be left on? Should I remove all the factory-installed batteries or can I just disconnect them?

Turn off the engine battery switch, the house battery switch, and pull the 6 or so fuses in the 24x7 fuse block. (2 bilge pumps CO detector, propane leak detector, Stereo memory).
That'll cut power to the boat. LFP should be fine to be put away for the winter without a battery tender with no loads on it. You could opt to pull the T-class fuse to ensure the house bank is completely isolated. I would also recommend turning off the switch for the inverter (the isolation DC switch). For the thruster and engine batteries, they are both AGM and will discharge 1-3% per month. It wouldn't hurt to pull those two and keep them in the garage on a charger.
