Hey folks - I'll check this when I'm at the boat this week, but maybe a stupid question:

If I wanted to swap out one of the standard 110V outlets for a combo 110V and USBC outlet...is that pretty straightforward?

In a home this is a no brainer, and I'd think its the same on the boat, but figured I'd ask before not thinking through something...

Yes, it's the same as home. Just watch out for size since those combo plugs with USB-C often are much deeper than a standard plug. It's not usually a problem, but you just need to manage your wires behind it carefully. I just replaced my plug that my microwave (removed permanently) plugged into without problem.
 
Probably not a large concern, as the inverter itself already has an idle power draw of 10-20 watts, but these outlets add about 0.1W to that when idle/standby

They also typically don't provide good amperage, at least not ones that at CE certified. Finding PD is extremely difficult, I have a Leviton one at home and it drops negotiating higher voltage with 2 devices plugged in - my HomePod starts complaining because it isn't the correct PD profile. 12V ones are way better here for power delivery and standby draw.
