When I am off shore power and I use the inverter to power the AC Outlet on my R23 it seems the GFI is tripped, but I can't seem to reset it no matter how hard I push the reset. The inverter green light on the breaker panel lights up, so I believe the inverter is properly functioning, but no power to the outlets.

You did not mention, but the AC source switch is set on inverter?

I would test the inverter with the microwave to see it that kicks on. You should have port and starboard outlet breakers, have you tested the inverter with both breakers on?

You don’t stare which GFI you cannot reset. There is one on the inverter itself on the output receptacle. Try resetting that first. If that is tripped none of the other circuits will work and pushing the reset on the other GFCI’s won’t help.

Thank you for all of the suggestions. Red Raven had the answer; I reset the inverter GFI. When I did and I properly turned on the inverter, the receptacle GFI reset (because there was power to it), the microwave worked. Again, thanks to all.
