how much of personal items and gear do people stow away while underway i.e. appliances coffee markers etc.

Everything should be stowed and all drawers locked unless you are 100% sure you will not get waked, that calm conditions will not change much, and you will not need to implement any drastic maneuvers to safely operate your vessel. On a calm uncrowded lake sure. Otherwise we don’t.

Every thing that can move easily needs to be secured or stowed safely from movement. Cushions and soft items can be left unsecured. Fire extinguishers MUST be secured from moving.

You can leave a few things in the sink but make sure the sink is covered with a board or something similar.

Never leave anything on the stove surface and turn off the propane supply at the tank.

Make sure any heavy items in the head are stowed safely.

Items on shelfs should be examined as they can shift around easily.

Stow the binoculars as they are heavy and you don't want things like that flying about.

I only take and store what is needed for the cruise / adventure were on! That said being an old submarine sailor, and used to (angles and dangles) to check for proper storage. Anything that hits the deck is confiscated and placed in secure storage! It will be wrapped and placed under the Christmas tree as there gift! I do the same for items left at the pool by the grandkids! Don't worry as Grandma makes up the difference, but they are getting better at storing /securing items on the boat, and picking up after themselves, or maybe I'm just getting soft in my old age.
