I did ours on our 2015 Cutwater 30s last winter. It was a miserable task using a 2 part marine varnish. The veneer is not very thick so prepping the sheets had to be done very carefully to make sure that I did not sand through the veneer.
The weather damage could not be completely addressed. Fluid motion did not use an exterior product for the headliner it’s just the same material as the flooring and it was not finished on the back side so moisture impacted the material from both sides. What ever you do, be sure to seal both sides and the edges.
So that said, if I had to do it again I would purchase new teak and holly exterior plywood and just use the old sheets as patterns. There is a supplier in OH that has many options to choose from.
I would call them and discuss options.

External teak needs a lick and a promise every year; just did mine on an R29, wasn't too bad, used a pressure washer and applied product. If I could invent a product that would last longer than a year I'd be sitting on that R41 right now!

I don't know how committed you are to the Teak and Holly headliner, but I saw a post long ago that one person replaced their aging headliner with Sea-Dek. That has always seemed to me like a good option. If you have the panels off, they would make a good pattern.
