Cooling options without built-in AC?

I’m interested in knowing about cooling options for a boat if the climate inside the cabin gets hot. I know boats like a Ranger Tugs R-31 CB come in an LE option that has AC. What are the options for a boat around that size for cooling inside if you do not have AC? I’m interested in what could be done professionally as a retrofit, what are the risks and costs of those options, and what could be done as solutions moored and anchored without some type of built in retrofit.
