Cooling options without built-in AC?

I’m interested in knowing about cooling options for a boat if the climate inside the cabin gets hot. I know boats like a Ranger Tugs R-31 CB come in an LE option that has AC. What are the options for a boat around that size for cooling inside if you do not have AC? I’m interested in what could be done professionally as a retrofit, what are the risks and costs of those options, and what could be done as solutions moored and anchored without some type of built in retrofit. Thanks for your expertise and insights!
 
At one time I had considered installing a RV rooftop air conditioner on my boat utilizing one of the skylights. Basically removing the window and replacing it with a 12 volt RV rooftop unit. Cost is less than a $1,000 and twice the BTU’s of the previous mentioned unit. They are on most campers, vans and semi-trucks not to mention tractors and various construction equipment.
Since I spend 90% of my time in the PNW I gave this modification up and bought a heater!
