So, I was planning on adding some countertop space to our R21EC "RedBird".
Some creative TugNuts members had posted options for adding folding tops to the port and starboard sides of the cabin.
I decided to do the same and explored using a polyethylene cutting board for the folding countertop.
I ordered this from Amazon:

and planned on cutting it down for the folding countertop.
However, when it arrived I realized it was the same size as the passenger seat cushion.
And, since I had been looking for a "functional" place to stow the passenger seat when using the sink / stove-top I decided to mount the cutting board under the seat and use it as a countertop by inverting the seat top.
It turns out the project was super easy. Drilling holes for the seat standoffs was all that was necessary.
And now the passenger seat (inverted) can be used as a counter top or cutting board. It fits perfectly over the refrigerator or placed on the engine box.
