Took everyones advice and opted for a costco memory foam topper cut to fit the forward bed. Electric knife worked GREAT. Now looking for options on covering other than sunbrella because of cost and feel of product
 
We just slept on a middle weight comforter that we placed on top of the memory foam covered cushions tucking the sides along side the cushions. We just used a second comforter on top of us. You could cut the foam into separate cushions and have a seamstress do a fitted sheet with Velcro. After a week flip it over and use the other side. Then pull it off and wash it if you have to have sheets.
 
We use a king size cotton Sealy mattress pad trimmed to 6" larger than the 3" thick memory foam topper on all sides and tuck it under the foam pad with the untrimmed flat king sheets. Occasionally comes loose but mostly stays in place. We cut our foam topper to be quite tight against the bolsters. Vicki says she gets the best nights sleep ever when on the boat!
 
We also just use a sheet folded under around the edges. Stays in place just fine. One negative aspect of the single large piece of memory foam over top of the original cushions is the hassle involved with accessing the storage space under the vee berth. Seems like that memory foam fights back when you try to move it.
