My "minimum viable product" when I did this on my sailboat was to duct-tape the tank sensor switch and set it on a mini milk crate in the sink (I tried just a perforated tray first, and it didn't get enough airflow).

The problem I found was that it dramatically reduced efficiency. The sink and crate gave enough surface area that a lot of the water just seemed to re-evaporate. I kept a humidity-logging weather station and when I switched to the hose (which went directly into the drain) it made quite a difference.
 
Interesting! I did not think about that. Great idea.

FWIW, I went with one that has a hose attachment (and route it to the bilge). She stays @ 40% reported RH pretty easily with the large model noted earlier.
 
We use a small dehumidifier purchased through Amazon and drilled a small hole in the slide in tray. This sits on the edge of the galley sink on a small board with the hole angled over the sink. To help improve airflow we use a small fan sitting on the floor pointing, on an angle, down into the stateroom leaving the head door open. This has worked for us during the hot summer months in the Tampa Bay area without a problem. Having the boat stored in a covered storage facility does help in providing shade but the set up does keep the humidity down.
