I live in the Upper Peninsula of Michigan--very cold (subzero at times), snowy and variable temps during the winter. I have my R27 RIB 8' factory issue dinghy laying upside down with the pontoons deflated on my picnic table in the back yard. The floor of the dinghy rests on the table and the pontoons resting on the bench seats. Actually, a very nice fit. I've covered it with a tarp. Will it be okay like that outside for the winter?

I kept a Sea Eagle 14' semi inflated strapped down on the trailer covered for 20 years each winter. Never had a problem. 🙂
With your system I'd be concerned with the wind. Unless you tired her down real good, and have a heavy picnic table. IMHO.
 
There are several Ribs still mounted on the platforms of boats stored outside at the marina I store my boat at. Most are covered and inflated (Northern Illinois) I don't think the temperatures will hurt the material. I deflated our 8'10" aluminum Rib, sucked as much air out as I could and rolled it up to make it as small as possible. We carried it into our basement. It was tight getting it down the stairs but doable. I then inflated it. I was told by the dealer it is best to keep it stored inflated when possible. I don't know if that is a fact just took his word.
