Congratulations on your new boat! It will be very much fun.
I installed a anchor windlass on my 21EC. I works well. There is no set protocol or instructions to accomplish installation. I found only, maybe, TWO other 21ECs with windlass' installed. Tugnut named "Pearl" installed a windlass on his 21EC and was the motivation for my work. His installation thread is
here. If you scour the photo albums on Tugnuts you might find 1-2 other 21ECs with windlass.
In my case, I used a Lewmar 700H Profish model windlass. I didn't really want the "Profish" model but, at the time of purchase, it was cheaper than the plain 700H. Anyway, to make it work, you must fabricate a "box" or pedastal for it to be mounted upon which will raise it to the height of the anchor roller. Oh, and you must exchange the existing anchor roller for a longer one. I used the Lewmar 66840008 "Bow roller for Delta type anchors." The initial post detailing my installation is

If you mount your windlass on a box or platform, you should also give consideration to WHERE you will cleat off the anchor rode so as to not subject your nice new windlass to SNUBBING loads (which is BAD for the gear). Anyway, I mounted a cleat next to the windlass on the platform...the existing bow cleat remains but is too low to effectively cleat the rode...unless you use a bridle which is simple to make and a really elegant solution for overnight anchoring.
I elected to use the wired Lewmar remote in addition to the UP/DOWN rocker switch at the helm - rather than installing the UP/DOWN foot switches at the bow. So far, I'm pleased with the installation and would not change anything.

PS - If you don't have an Autopilot, I would strongly recommend one of these as well. I've put MANY modifications to my 21EC and, no question, the AP is by far the most used/useful.
