I have a 2014 R27 with a MACE generator. When the dealer showed me how to use the air conditioner, they said to turn on the MACE, let it warm up for a bit and then turn on the air conditioner. I have done this several times recently and it works great.

I am wondering, though, if I am underway could I just switch the power source to inverter and then run the air conditioner that way? Will the engine (Volvo-Penta with no modifications to the alternator) be able to recharge the batteries while the air conditioner is running or am I totally missing something important here?

I don't have air conditioner on my boat, but I'm going to make an educated assumption that your inverter will not be able to generate anywhere near the amperage required to run your AC, much like the inverter on my boat won't run the electric stove.
 
My alternator, a Yanmar 100 Amp, well not keep up with the boats ac. We put a second ac, 5500 Btu per hour, and the inverter powers it easily.
