Kayak Advice for R27

We are new to the Ranger Tug community. Looking for any advice on carrying two hard shell sea kayaks on a 2019 R-27. Are two possible with the solar panel? Any length constraints? Looking to get a single and a double that would work for exploring while on the hook as well as the occasional multi-day trip. Advice on best mounts appreciated too. Looking forward to meeting folks at the Seattle Boat show and the 2019 Desolation trip!
 
I don't have a lot of upper body stamina, so the Hobie with the Mirage Drive, does wonders for long exploring. Its a 9ft inflatable, they do make an 11 foot and a 12 foot with dual mirage drives.

Inflatables work for me, as I tow my boat long distances and everything goes into the truck or boat. Hobies are expensive, but they have proven tough from Alaska to the Bahamas folded and crammed, inflated and stowed in the cockpit. Can't tow them as the well for the mirage drive allows water into the boat and break the tow attachment handle.
 
We have an advanced elements double but it weights about 60 lbs and is fairly large to stow uninflated. I recently acquired a Sea Eagle straight edge weight about 30 lbs and stows easily and it allows for double or single use. It does not have a deck so best to use in calm waters. Cheers
