Does anyone know the max person capacity of a Cutwater 30CB and is there a label somewhere that shows this. For example the dinghy has a max capacity of 4 people.

The law that requires that label on a boat is only for 20' and smaller vessels if I recall correctly.

"Under the U.S. Coast Guard Federal Boat Safety Act of 1971, boats less than 20 feet powered with an inboard, outboard, or stern drive engine manufactured after November 1, 1972, must display a capacity plate defining the safe load limits. This plate must be mounted where you can see it when preparing to get underway."

Number of people =
(boat length (ft.) × boat width (ft.))÷ 15 @150lb er person. In good weather.
So 20 people.

But in my experience with a C30CB, 3 to 4 couples is our max if your out for the day just because ist no fun if you can't move around.

If your just going from a to b then I have packed the cockpit with everybodys camping gear and 12 people on board.

If you're still figuring out your boat, less is more until you're comfortable.

I agree with everything SKing says. 20 is the max number for coast guard requirements. I have had 10 adults and boat handles it well but elbow room was tough. If you have several people and gear in cockpit, try to keep engine running until you can off load some weight. The concern here is potential introduction of seawater through exhaust and filling your muffler lift and then into engine while engine is shut off. Not likely but another thing to think about as captain.
 
Keep in mind, you HAVE to have one life jacket per passenger.
