Maximum Weight Recommendation for Dinghy on Weaver Davits

The prior owner of our 2021 R-31 CB, equipped the boat with a 165 lb RIB on 4 up and 4 out Weaver Davits, along with a 90 lb 9.9 outboard handing on the stern rail. I already swapped the 90 lb engine for a 56 lb 6 hp, but I am suspect that the 150 lb dinghy is affecting the performance of the boat. I know when considering performance, e.g. top speed, cruising speed at a certain RPM, engine temperature, there are many factors to consider including but not limited to: condition of the bottom, water temperature, currents, weight of crew, cargo on board, balance, etc.

I cannot seem to get this boat over 16 knots at WOT and it really only cruises happily at 12-13 knots before the engine temp rises when the dinghy is on the davits. The stern of the boat seems a little more "tippy" at the dock and seems to sit a little lower in the water than it should. I really feel like I'm dragging the stern under power, even with the trim tabs fully down. I haven't yet had the opportunity to do a side by side run with and without the dinghy on the back. But, by comparison, I had an 85 lb RIB and 56 lb outboard mounted on Kato Davits on our 2019 R-29 CB and was able to get better cruising speed as well as top speed. I expected the R-31 to be slightly slower, but not this much.

The displacement of the R-31 is 1,700 lbs more than the R-29 and the length at waterline is a bit longer and it should theoretically should handle a little more weight at the aft end. What is the factory recommendation for maximum weight hanging off the stern? Thank you!
 
And I should add that I might not be referring to maximum weight, but instead, too much of a change in the center of gravity toward the aft end of the boat.
 
I wouldn't go over 300 lbs on the stern (swim step). As for the center of gravity is something I will have to ask engineering about, but there shouldn't be much of a change.
