New owner, lots of questions.

I've just bought a R21 in Pensacola. I will export the boat to Uruguay/South America where I am living now. I fell in love with the design and simplicity of this little boat. I thnk it's the first R21 in South America.
Assuming that no boat is perfect, the R21 has some details that can be easily solved by the manufacturer. This one I bought comes with a 12 volts AC. Surprisingly the owner's manual suggests to use the 12 volts AC only with shore power. So why it's 12 volts? I bought a EU1000 watts Honda generator. I want to cruise with the AC on.
Due to the tight beam, the R21 rolls a lot. A Bayliner 170 rolls less. Any suggestions to avoid heavy rolling?
I have a full enclosure, but I will like to have the small bimini top. Has anybody adapt a conventional bimini top? Like those for sale on Ebay?

I am thinking that the EU1000 might be under powered to run the AC. On my R25 it takes an EU2000
MY AC is 120vac only.
The AC unit takes too much power to run it through an invertor off the battery set.
