My 21EC came new with a really nice single axle aluminum trailor that has oil bath bearings. I believe these to be really advantageous since one should be able to detect any kind of deterioration or contamination from the window. Since we've been strictly freshwater use with very little mileage, I see no reason to service without some indication. Though it would be nice to have received some sort of documentation detailing minimum requirements from the manufacturer, I find it all but impossible to access what I need online. Has anyone else encounterred / resolved this problem?

If the oil stays clear, leave it alone. Wheel bearings are good for 100,000 miles if the lubricant remains contaminant free. If it starts to look milky white it is picking up water and needs to be serviced.
 
Most people I know with the oil bath bearings have had brake issues well before any bearing maintenance was needed. If you have disk brakes rather than drums and you wash the brakes and other running gear down after submerging (especially in salt water) you might be able to extend those issues until you can do it all at once.
 
Washing and flushing the wheels after launch and retrieval is a great thing to do. However, many times the ability to do it is limited when you are on the road cruising and no fresh water is available. Float-on trailers has recommended carrying one of those insect sprayers with a solution of Salt-Away and just spraying the wheels after each submersion in salt water.
