The panel in the galley always has a green light on even when the power cord is NOT attached. There must be a battery drain for this light. How do I shut it off for long term dry storage?

You'd have to pull the fuse located on the small fuse block on your power distribution panel.

There are quite a few devices that draw power when shut down. If you are storing the boat long term I would suggest disconnecting all the batteries. This gives you the opportunity to clean all the connections and terminals when you start up again. I suggest that you take a picture before disassembly and as and additional safeguard zip tie each group of wires together and then mark which terminal they go to.

I have everything switched off, but next time I stop by the boat, I'll check the propane monitor.

My boat is shrink wrapped but the solar panel is still putting some (reduced) amps out. I've left the batteries switched off but they are still getting charged. Over the past month they are staying happily up at 13+ volts. I kind of figured that this is an ideal situation. Am I doing it right?

If you are getting some charge out of your solar panel you should be golden. The discharge will often occur if the boat has no solar or a solid cover that may prohibit charging from the panel.
