I'm looking at buying a used 21-EC but it comes with a swim step that I don't need. It would be in the way for the boat's intended use.
How hard of a job is it to remove the step? Are the bolts for the mounting bracket thru-hull and if so is there good access for their removal and sealing the holes?
 
If you mean the swim platform, it is bolted through, access is behind the fuel tank. Not a job for mortals!
 
The swim step (ladder) is an important (life saving) self-rescue device.
 
On my 2015 the swim platform adds three feet to the LOA which could be a downside if you are purchasing
dock space. Removing it and plugging the bolt holes would not be difficult IMO. I see it as a convenience, but would reconsider if it put me in a higher priced classification at the dock.

We were swimming around the boat and I tried to come back up on the boat without using the ladder, I failed at the stern and on the beam too... I would recommend that if you wish to remove the swim step, that you install a ladder as a safety precaution, never know, maybe one day someone will fall in the drink!
 
Thanks for the words of wisdom, folks. I'm well aware of the safety advantages of the swim platform and I agree that in certain conditions it would be of benefit. But, I don't need it, can't use it, and it would be in my way.

Now...back to the original question. Please. Has anyone actually taken one off and if so how much of a job was it? From the pictures it looks like the bottom bracket holes would be a water ingress point. Tips on sealing the holes?
 
Assuming you do not need the surface smooth and looking like there was never holes there I would do the following. Fill the holes with 3M 5200. While the 5200 is still wet insert stainless bolts just slightly smaller than the holes with stainless washers on both ends backed with additional 5200. and nuts. Add locking stainless nuts and tighten. Wipe away any 5200 that squished out. Guaranteed to never leak or come out and easy to do!

The hard way, assuming you want a smooth surface. I would use a marine epoxy mixed with a bit of filler to stiffen it up. Over fill the hole. After it cures, sand it smooth using finer and finer papers and finish by buffing and polishing the area. You could then repaint the area with a matching paint.

Yes very do-able. We inquired about our swim grid being mounted on a hinge system so it could pivot up when in tight spaces and for storage. They told us they had done that and also removed them in the past. It’s just a bit of work getting in behind the fuel tank to access the bolts/holes. Good luck with it.
