I have pretty much finished my enclosure. This is HOME MADE so that accounts for the amateurish appearance. I used a Sailrite LS1 straight stitch sewing machine and basically copied various elements of others' designs.
My factory supplied surrey top came with NINE zipper sections sewn into the top edge of the canvas to accommodate the canvas enclosure.
I have clear panels to go all the way around. There are also (3) screen panels consisting of a pair of large side panels and an aft panel. I made the side panels LARGE (meaning "double" width or TWO zippers segments per panel). I can see now that this makes the glass panels TOO LARGE to manage. But, the screen panels are fine - very light and foldable. I will probably get more zippers and cut the large side panels in half to make them more manageable. I still need to make the openings at the bottom for the cleats for tying her off and install the "straps" to hold the panels in a rolled up position.
I don't know where I'll keep the panels on the boat...storage aboard the 21EC is minimal. I'm thinking of a bag suspended from the surrey frame to hold the panels stacked together. We'll see...
