R31 Cockpit Table Varnish Application

I am trying to re-varnish the cockpit and bridge table on my 2019 R31 CB.
I have applied the Minwax matte varnish however the finish is glossier than the factory finish.

What am I doing wrong?

I have thought about wet-sanding after varnish but that seems unnecessary.

Did you stir it well? Flatting agents are heavy and sink to the bottom of the container...

I thought I did.

I will try again in a test piece to see if this works.

I have also thought about trying a spray can of the same varnish.

I did my aft table and one for my friend's 31. I used a rattle can. Came out great.
