Oh Well !!
First thanks for providing me information on the manufacturer of the latches and the part number for lockable latch.

I am getting ready to remove the non locking latches and install the 3 lockable latches. Don't want to damage the hatch covers obviously. What do you suggest I use to "soften" the sealant used when original latches installed? What sealant should be used when I install the lockable latches?

Don't be surprised if there isn't sealant. All my latches were installed without sealant. I had water dripping into my compartments and resealed all the weatherstripping and still had leaks. I thought an o-ring was missing in the latch so I carefully removed it. No need to be careful it wasn't sealed and the wood around the latch was water soaked. I have a Friday boat so maybe its just my boat. I removed all my latches and sealed them with Boat Life Life seal.
 
Oh Well,
I replaced the latches on my R27OB as well. After removing the screws and nuts I pryed with a screwdriver firm and steady and the factory latches came up. After cleaning the old sealant I installed the new locking latches with 3M 4200 in white.

Hi Oh Well. I am sure that you will have thought of it but, if not, make sure that when you place the order that you have the manufacturer key all of the latches to allow them to be opened by the same key.

Thanks for your comment about keys. When I called the supplier I did what you suggested. I now have 6 keys for the latches. Hopefully more than I can ever lose. BTW I have taken the original latches out the other day and plan is to install the new latches this coming week. There were two surprises however. The screw heads were not Phillips head but a square head so new tool in the tool box. The second was that it appears when the factory installed the screws they had to cut them a bit shorter. I had to take a mini grinder to clean up the screw end so not to cross thread when I reuse the screws.
