My guess is the “seat sensor” is referring to the switches that illuminate the red warning light at the helm when either of the cockpit seats have not been returned to their locked down position. They must be stowed before getting underway.

I recently asked RT about the "seat sensor."
Here's the response received from Marco Arias of RT's Customer Service:
"The seat sensor is a light at the helm that turns on when the flip seats in the cockpit (integrated with the hull) are open and the ignition is on. This applies to the Cutwater 30."

This is correct. It is a magnetic switch that tells the light to turn on when they are not next to eachother. Follow this link and you will see yours installed by each flip out seat.
