So is the water pump okay to leave on while underway? What do people do? It’s not in the most convenient location to turn on and off frequently.
 
I've always turned off the water pump under way. Twice while sailing a fittimg came loose and it took a while before someone noticed the sound of water sloshing about...

I used to keep the water pressure switch on but having the tank empty twice I now keep it off when underway. First time while underway I reached around to put a cup in the sink, in doing so I hit the faucet handle and didn't realize it. Second time a clamp came off a line going to the hotwater heater and dumped the water into the bilge.
 
So this pump is responsible for sinks, shower, wash downs ? Does it do the toilet?

The fresh water pump supplies water to galley and head faucets.

Your toilet is most likely plumbed to use water drawn from the same thru hull strainer that supplies water to the engine. However, there are some vessels that are plumbed to use water from the onboard fresh water tank.

Your washdowns get water from the thru hull strainer. At least that’s the water supply for the washdown on my R27.
