Yes, it's possible. We finally made use of our new Saturn SD230 dinghy that's been sitting packed in it's bag in the large cockpit storage hold. Anchored out for the first time in 3 seasons (I know, I know) and also used the windlass for the first time ever. Now I'm not sure why we waited so long but that's another story.
As planned but never executed, I took the dinghy out of the bag, set it in the cockpit while anchored, and blew it up with the hand pump. Piece of cake. I'm very impressed with this small but well constructed dinghy. It seems very solid and is 7'6" and weighs 66lbs. After using it to get to shore, I sized up the swim step and decided that the dinghy would fit there. It fit perfectly, did not extend past the sides of the boat, did not inhibit the motors and was easy to secure using bungee cords snugged down tightly. When we were done with using it, the dinghy surprisingly deflated and folded back nicely in the bag and back into the storage hold it went. I'm very happy with this solution.
